Description
Wood blewit, dried, wild-harvested. Hand-sorted and gently dried. The wood blewit grows in deciduous and coniferous forests, usually in late autumn. Its distinctive features are the flesh, violet throughout, and a savoury, slightly perfumed aroma.
Preparation
Soak in warm water for 20 to 30 minutes, rinse and cook with the dish for at least 15 minutes. The mushroom is not tolerated raw, thorough cooking is necessary. Goes well with game dishes, dark sauces and pasta.
Yield
100 g of dried wood blewits is equivalent to about 1 kg of fresh mushrooms.
