Description
Tuber uncinatum, Burgundy truffle, dried in thin slices. The Burgundy truffle is considered the more aromatic relative of the summer truffle: darker in the gleba, more savoury in flavour, with a fine note of hazelnut.
Wild-harvested, hand-sorted and gently dried.
Use
The slices can be shaved or ground dry over the finished dish. For a fuller aroma, steep them briefly in warm liquid or warm oil, then add to pasta, risotto, egg dishes or sauces. Do not cook them with the dish, as the aroma evaporates with heat.
