Description
Field mushroom, dried, wild-harvested. Hand-sorted and gently dried. The field mushroom grows on unfertilised pastures and meadows, usually after heavy rain. Mild in flavour, with the typical, slightly aniseed-like smell that characterises the genus.
Preparation
Soak in warm water for 20 to 30 minutes, rinse and cook with the dish for at least 15 minutes. Goes well with light sauces, soups and bakes where a subtle mushroom flavour is wanted.
Yield
100 g of dried field mushrooms is equivalent to about 1 kg of fresh mushrooms.
